Wrapped Carrots – 13g Carbs

Servings: 4 wraps each

4 medium carrots, cleaned & peeled
1/2 cup lite mayonnaise
2 Tbsp dry buttermilk salad dressing mix
16 slices of thinly sliced lean turkey or dried beef

Cut the carrots into 4 pieces. Combine the mayonnaise and dressing
mix. Dip each piece of carrot into the dressing and roll up in slices
of turkey or dried beef. Secure with a toothpick.

Wheat Berry & Garden Tomato Salad – 21.4g Carbs

Servings: 8
Serving Size: about 3/4 cup each

3 cups cooked wheat berries
4 cups coarsely chopped ripe tomatoes
1 1/2 cups cubed, seeded cucumber
1/2 cup sliced green onions and tops
1/4 cup finely chopped parsley
1/2 cup (2 oz) crumbled reduced-fat feta cheese
Roasted Garlic Vinaigrette (recipe follows)
Salt and pepper, to taste
Curly endive or escarole, as garnish

Combine wheat berries, vegetables, parsley, and cheese
in salad bowl; pour Roasted Garlic Vinaigrette over and
toss. Season to taste with salt and pepper. Serve on
endive-lined plates.

Roasted Garlic Vinaigrette

Makes about 1/2 cup

2-4 Tbsp olive oil
1/4 cup balsamic vinegar
2 tsp minced roasted garlic
1 tsp dried mint leaves
1 tsp dried oregano leaves

Mix all ingredients; refrigerate until
serving time. Mix again before using.

Servings: 8

Cauliflower W Creamy Cheese Sauce – 11.7g Carbs

1 whole cauliflower (2 lb)
Creamy Cheese Sauce (recipe follows)
Paprika, as garnish
Finely chopped parsley leaves, as garnish

Place cauliflower in saucepan with 2 inches of water;
heat to boiling. Reduce heat and simmer, covered,
until cauliflower is tender, 20 to 25 minutes.

Place cauliflower on serving plate; spoon Creamy Cheese
Sauce over and sprinkle with paprika and parsley.

Yield: Makes about 1 1/4 cups

2 Tbsp minced onion
1 Tbsp margarine
2 Tbsp flour
1 cup fat-free milk
1/2 cup (2 oz) cubed reduced-fat pasteurized processed
cheese product or shredded reduced-fat Cheddar cheese
1/4 tsp dry mustard
2-3 drops hot pepper sauce
Salt and white pepper, to taste

Saute onion in margarine in small saucepan 2 to 3 minutes.
Stir in flour; cook over medium-low heat, stirring constantly,
1 minute. Whisk in milk and heat to boiling; boil, whisking
constantly, until thickened, about 1 minute.

Reduce heat to low. Add cheese, dry mustard,
and pepper sauce, whisking until cheese is
melted. Season to taste with salt and pepper.

Yield: Makes about 1 1/4 cups

Garlic Turkey Burgers – 4g Carbs, 0g Fiber

Servings: 4

1 lb lean ground turkey
1/2 cup frozen shredded hash brown potatoes, thawed
1/4 cup sliced green onions
2 Tbsp grated Parmesan cheese
1/8 tsp freshly ground black pepper

Preheat the broiler. In a medium bowl, combine turkey, potatoes,
green onions, cheese, and black pepper. Mix well. Shape into
four patties (1/2-inch thick). Place patties on broiler pan.

Broil 4 to 6 inches from heat for 8 to 10 minutes or until no
longer pink in center and thoroughly cooked, turning once.

Servings: 4

Oven Fried Fish – 26g Carbs

Yield: 4 servings
From: The All New Good Housekeeping Cookbook

2 tsp vegetable oil
1/4 cup all-purpose flour
1/2 tsp salt
1/4 tsp ground red pepper (cayenne)
2 large egg whites
1 cup plain dried bread crumbs
1 lb flounder or sole fillets, cut on diagonal into 1-inch-wide strips

Preheat oven to 450 degrees F. Grease cookie sheet with oil.

On waxed paper, combine flour, salt, and ground red pepper,
In shallow bowl, beat egg whites just until foamy. On separate
sheet of waxed paper, place bread crumbs. Coat flounder strips
with seasoned flour, shaking off excess. Dip into egg white,
then coat in bread crumbs, patting crumbs to cover. Arrange
fish strips on prepared cookie sheet.

Place cookie sheet on lowest oven rack and bake fish
6 minutes. With wide spatula, turn fish. Bake until just
opaque throughout and golden, about 6 minutes longer.
