Instant Cocoa Mix

Ingredients:

  • 2 cups nonfat dry milk powder
  • 1/2 cup lower-fat powdered non-dairy creamer
  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon Equal® for Recipes
    or 10 packets Equal® sweetener
  • 3/4 teaspoon ground cinnamon (optional)

  • Equal® sweetener can be substituted with other sweetener products. Nutrition contents might be different from those listed below.
  • Directions:

    1. For cocoa mix, stir together milk powder, nondairy creamer, cocoa powder, Equal® and, if desired, cinnamon.
    2. Cover and store in an airtight container.
    3. For each serving, in a heat-proof mug add 3/4 cup boiling water to 1/3 cup cocoa mix; stir to dissolve.

    Yield: Makes 2-2/3 cups mix or 8 servings.

    Holiday Eggnog

    Ingredients:

    • 2 cups skim milk
    • 2 tablespoons cornstarch
    • 3-1/2 teaspoons Equal® for Recipes
      or 12 packets Equal® sweetener
      or 1/2 cup Equal® Spoonful™
    • 2 eggs, beaten
    • 2 teaspoons vanilla
    • 1/4 teaspoon ground cinnamon
    • 2 cups skim milk, chilled
    • 1/8 teaspoon ground nutmeg

  • Equal® sweetener can be substituted with other sweetener products. Nutrition contents might be different from those listed below.
  • Directions:

    1. Mix 2 cups milk, cornstarch, and Equal® in small saucepan; heat to boiling; boil, stirring constantly for 1 minute. Beat eggs in medium bowl. Mix about half the milk mixture into eggs; then add this egg mixture to remaining milk in saucepan. Cook over low heat until slightly thickened, 1 to 2 minutes, stirring constantly. Remove from heat and stir in vanilla and cinnamon. Cool to room temperature; refrigerate until chilled, or until serving time.
    2. Stir 2 cups milk into custard mixture; serve in small glasses or punch cups. Sprinkle lightly with nutmeg.

    Variation: If desired, 1 to 1-1/2 teaspoons rum or brandy extract can be stirred into the eggnog.

    Yield: Makes 8 servings.

    Fitness Shake

    Ingredients:

    • 2 cups skim milk
    • 2 medium-size ripe bananas, cut into l-inch pieces
    • 1/2 cup fat-free plain or banana yogurt
    • 1/2 cup nonfat dry milk powder
    • 1/3 cup wheat germ
    • 1 teaspoon vanilla
    • 2-1/2 teaspoons Equal® for Recipes
      or 8 packets Equal® sweetener
      or 1/3 cup Equal® Spoonful™
    • Ground cinnamon (optional)

  • Equal® sweetener can be substituted with other sweetener products. Nutrition contents might be different from those listed below.
  • Directions:

    1. Process all ingredients, except cinnamon, in blender or food processor until smooth. Pour into glasses and sprinkle with cinnamon, if desired.

    Coffee Latte

    Ingredients:

    • 1-1/4 cups regular grind espresso or other dark roast coffee
    • 1 cinnamon stick, broken into pieces
    • 6 cups water
    • 2-1/2 teaspoons Equal® for Recipes
      or 8 packets Equal® sweetener
      or 1/3 cup Equal® Spoonful™
    • 2-1/2 cups skim milk
    • Ground cinnamon or nutmeg

  • Equal® sweetener can be substituted with other sweetener products. Nutrition contents might be different from those listed below.
  • Directions:

    1. Place espresso and cinnamon stick in filter basket of drip coffee pot; brew coffee with water. Stir Equal® for Recipes into coffee; pour into 8 mugs or cups.
    2. Heat milk in small saucepan until steaming. Process half the milk in blender at high speed until foamy, about 15 seconds. Pour milk into 4 mugs, spooning foam on top. Repeat with remaining milk and coffee. Sprinkle with cinnamon before serving.

    Yield: Makes about 8 servings.
